Description
Vinification:
The grapes come from limestone terroirs.
This wine ferments at between 15 and 18°C in temperature-controlled vats, and is then aged for 5 months on the fermentation lees to fix the bouquet. After the first fermentation, we induce a second fermentation to produce fine bubbles. This cuvée will be aged for 12 months on laths to refine the bubbles and add elegance and fruitiness. After gentle riddling, the bottles are disgorged. Once these operations have been completed, we leave them in the cellar for three months to allow the terroir and all the fermentative aromas to come to the fore.
Tasting :
Colour : pretty pink with silvery tints. Long, persistent string of very fine bubbles. Nose: subtle fruity aromas, supported by morello cherry notes.
Palate: soft on the palate, with spicy flavors. The finish is fairly long with a supple structure; after oxygenation, notes of red berries appear.
Food pairing:
Red fruit tartlet.
