Once upon a time, there was a wonderful story of winegrowers and winemakers… that of the Norguet family, who have been running their Domaine du Four à Chaux for 7 generations, in the heart of the Vendôme region at Thoré-la-Rochette.
The Four à Chaux (lime kiln) is a protected site dating back to 1767. It is a vestige of the time when tuffeau, a soft limestone with flint extracted from the hillsides, was used to build the châteaux of the Loire, the surrounding manor houses and the houses of the Loire region.
In a traditional setting, the estate boasts magnificent two-hundred-year-old troglodyte cellars, dedicated to the cultivation of mushrooms and the ageing of local wines. Today, they have become a convivial venue for tastings of red, white, rosé and grey wines.
Norguet, vigneron fer de lance de l’appellation, cultive 29 hectares de vignes à Thoré la Rochette, petit village abrité dans la Vallée du Loir et vinifie avec passion ses vins dans une ancienne cave.

Discover this sumptuous Coteaux du Vendômois contrôlée red wine, Cuvée Benjamin, from the Domaine du Four à Chaux in Thoré-la-Rochette. This red wine is made from the oldest grape varieties in the Loir Valley, Pineau d’Aunis, renowned for its fruity, spicy, balanced and powerful aromas.
Vinification: The grapes for Pineau d’Aunis, also known as Chenin Noir, are harvested and destemmed before undergoing an eight-day fermentation in vats. At the start of vatting, the grapes are heated to 27°C to help extract color and tannins.

Tasting: Clear, limpid red colour. The nose exalts finely spiced aromas. The palate is light, with a surprising freshness balanced by tannins that are present but not clinging. The peppery touch typical of Pineau d’Aunis lasts as long as you wish, offering an original sensation.

Food & wine pairing: Pairs well with cold meats, flank steak with shallots or an Asian recipe, where the pepper and mild spices blend harmoniously. Pan-fried steak with green pepper / Basquaise-style chicken, shoulder of lamb with rosemary, beef stew, beef à la ficelle, assorted charcuterie, West Indian black pudding
