Franck Bimont is the talent of a simple man. He lets the vines express themselves freely, bringing out the specificity of each vintage and creating expressive, elegant and much-loved wines. In the Loire Valley, the Domaine des Guyons is located in the heart of the southern Saumur region, in the charming village of Le Puy Notre Dame. A Saumur mecca, Le Puy Notre Dame is a concentration of talented winemakers, including Franck Bimont at the Domaine des Guyons.
On this 19-hectare estate, the vines, which have an average age of 50 years, grow on Turonian soils.
The limestone in particular gives the wine its freshness and finesse, but the tuffeau has also enabled huge cellars to be built, allowing the wine to mature quietly.

Description
A red wine made from Cabernet Franc vines around fifty years old, grown according to the principles of organic farming on a clay-limestone terroir. The grapes are harvested by hand and destemmed. The wine is vinified and matured in vats. A well-made wine for friends, without harshness… particularly easy to drink!

VINEYARDS: A group of old vines (50 years) of Cabernet Franc 100% from clonal selection.

VITICULTURE: Tilled soils ; no chemical fertilisers; ;Harvesting is done according to the soil type. the maturity of the plots. Harvesting of unripe grapes botrytised
VINIFICATION & BREEDING: The wine is made in small, non thermo regulated concrete vats (40 Hl.), without any input.
The grapes are destemmed at vatting and then infused. The duration of Maceration varies according to the vintage (8 –15 days) to seek harmony and fruit from grapes grown on old vines.Ageing : End of alcoholic and malolactic fermentation 100% in oak barrels. tank. Aged between 6 and 9 months, then after blending put into Bottled in the spring following the harvest. Residual su gar and alcohol : < 2g /l. and >12% Vol
GUARD: Drink within 5 to 10 years
FOOD AND WINE PAIRING: Serve at 15°C with traditional dishes that are sometimes a little spicy (rib of beef, steak, etc.) or with white meat.
