VOUVRAY SEC LES PERRUCHES JEAN-MARC GILET DOMAINES DE LA ROULETIERE 2021

Vinification :
This cuvée has been selected from the finest stony hillsides, on a tuffeau substrate (white chalk from the Turonian era). At harvest time, grapes of excellent ripeness are carefully picked and transported to the cellar. Then comes the pressing, which is carried out very slowly to extract the best juice from the pulp. This is followed by cold settling (natural clarification of the must). Part of this wine was fermented in temperature-controlled stainless-steel vats, and the other part in oak barrels (20%), aged on its fine fermentation lees, which are regularly put back into suspension for stirring for 6 months.
Food pairing :
Butter-roasted asparagus with mousseline sauce or roast poularde with lemongrass jus.
Tasting :
Appearance: Intense yellow with slightly silvery highlights.
Nose: expressive, dominated by white fruits (vine peaches), supported by notes of fresh almonds and acacia flowers.
Palate: soft and long, with citrus fruit and roasted hazelnut flavors.
