The description of our wines below gives an idea of the slow, patient construction of the Domaine in selecting the parcels, the soils and their orientation. Today, the vineyard covers 6 hectares, located solely in the commune of Vesdun in the Cher department. On my wine labels, I wanted to bear witness to the commune’s rich winegrowing past. The pencil lines represent one of Vesdun’s illustrious wine cellars, dating from the late 19th century and now transformed into the town hall. These beautiful buildings encouraged me to commit myself to creating a Domaine, reviving viticulture and revealing the secrets of this land.

Seen from the air, photographs over time showed that the landscape had been gradually closing in since the early 50s.

Back on firm ground, eyes were drawn to the vines buried in the undergrowth. A lot of information about the secret of the place, the link between the men and the land had disappeared. The ties that bound the winegrower, the land, the vine and his social environment had weakened, not to say disintegrated. A state of natural disorder that characterizes the physical quantity defined above: entropy. So it took a lot of energy to restore the landscape and imagine how to revive a vineyard 100 years after its heyday.

Description

Tressailler, otherwise known as Sacy, comes from the Bourbonnais soils adjacent to the Domaine’s plots. This grape variety enjoyed a golden age when the Bourbon family had access to the court of King Louis XIV. Thanks to its high natural acidity, the wine held up well on trips to Paris. Sulfites were unknown. So there was no need to stop at the vinegar factories in Orléans. As acidity was no longer in today’s taste and the control of sulfite doses a real advance, the possibility of rediscovering this grape variety from another angle was made possible. As a result, low yields (30 hl/ha) thanks to green harvesting throughout the estate and a harvest at good maturity revealed wines of great aromatic finesse and elegance.

Delicate nose of white flowers and violets, apple and sour candy. The palate is lively and perfectly balanced, with a fairly straightforward expression of substance. Pleasant overall. A lovely wine to pair with seafood or pan-fried fish.
