In the Loire Valley, the Domaine des Guyons is located in the heart of the southern Saumur region, in the charming village of Le Puy Notre Dame. A Saumur mecca, Le Puy Notre Dame is a concentration of talented winemakers, including Franck Bimont at the Domaine des Guyons.
On this 19-hectare estate, the vines, which have an average age of 50 years, grow on Turonian soils.
The limestone in particular gives the wine its freshness and finesse, but the tuffeau has also enabled huge cellars to be built, allowing the wine to mature quietly.
Franck Bimont produces a range of highly expressive, elegant wines.

Description

Made from old vines over 80 years old, L’Ardile is perfectly in line with Franck’s quest for grapes with a high degree of ripeness, giving the wine real density and capable of conveying the nuances of this clay-limestone terroir. Aged for 18 months, this Saumur develops a complex bouquet of exotic white fruit. Don’t forget to open it 1 hour before serving, so that it can be aired quickly or even decanted.

VINEYARDS: Old vines (80 years old) of Chenin or Pineau de Loire 100% from selection massale.

TERROIR: Middle Turonian clay-limestone. The microclimate of the Saumur region is the warmest and driest in the entire Loire Valley.

VINIFICATION & REFINEMENT:Direct filling into a pneumatic press and, after settling,fermentatispanon alcoolique en barriques bourguignonnes 230 litre capacity. Non-thermo regulated wine, with no added input.
Maturation: Alcoholic fermentation lasts for weeks in barrels ; nofermentation. malolactic. The wine stays 18 months with more or less stirring of the lees depend dingon the vintage to add fat.Suresidual sugar and alcohol: < 2g/l. and >13% Vol

VITICULTURE: Tilled soils; no chemical fertilisers ; search for healthy bunches of grapes (single Guyot pruning, aeration by splitting ,thinning, leaf removal, etc.).The grapes are harvested by selection from very ripe bunches, but not botrytised, with the aim of producing a dry white wine.

TASTING NOTES: A yellow colour with green highlights and a complex nose of exotic white fruit: lychee, carambola and a few mineral notes. Structured on the palate, with tangy citrus notes, long and fresh.

AGING POTENTIAL : Conservation: Chenin is known for its great ageing potential (15 years ormore) but many people don’t wait to appreciate its noble aromas
